I'd say it was the speech that Sam gave at the end of TTT:

I don't think that was really PJ originated, more adapted: Didn't he say that (basically, at least) in the Return of the King?

i liked 'stupid fat hobbit', 'you could've picked a better spot' and 'i would have followed you my brother...my captain...my king.'

what i really don't get is in the FOTR, Sam says in the corn field 'Don't you loose him Samwise Gamgee' but in the boat at the end, he says 'Don't you leave him Samwise Gamgee'. hmm...strange...

He actually mis-spoke his line in the boat, but they left it that way because it sounded good and made sense.
I liked Gimli in Moria "Now, Master Elf, you will experience the fabled hospitality of the dwarves! [something]...malt beerr ...rrrrr ed meat off the bone!" (of course that wasn't his attitude in the book, but I just like the lines and the way they are delivered.)
I also love Grima saying "Why do you trouble an already troubled mind?" and I take every opportunity to say that like he does when someone complains at me.

Yeah, the Brother, Captain, King line was great! To be honest, I don't really know which is my favorite.
