I agree about the question marks! Just one would be great.
From The Hobbit we learn that he had luminous green eyes and six teeth and was 'as dark as darkness' (whatever that means). In the Lord of the Rings we find out that he had pale skin and grey hair that was long and lank. He was of course hobbit-sized, somewhere between 3 and 4 feet and a little taller than Sam.

He's also thin, with a "shrunken belly". He's very strong for his size, and agile. Gives the impression of having tough, almost leathery skin (just my idea, but how else would he survive without clothes?).
I wonder if he has hair on his feet?

I believe 'Dark as darkness' is supposed to be a 'Childish' term. Gollum’s hobbit features faded, such as the hair, it became thin and wispy.

I pictured him as having big flat feet that would be good for swimming. Sort of flipper-shaped.
