I don't mind English food. I have never been to Britian and I know some of the dishes sound quite..well..not to my liking, but I do like Sheperd's Pie (sp?) and a few other British dinners I have had.

Hmm... this thread is a lot like the Teacup Café, except no kareoke or cannibalism... yet...

I think some people in England are lousy cooks and some are great, just like in any country.

Peanut Soup Recipe

Hey, anyone have a great recipe for peanut soup? I had some years ago in Maryland for Thanksgiving and it was sooooo delicious. I know that there are different versions, I've had a spicy peanut soup once in Michigan. I'd like one that wasn't too spicy....

For those of us who like hummus - I got a food processer this summer (just a simple one, not one of those that does 500 things) so I could make smoothies for the kids for breakfast - they're so healthy and easy! (just bananas, frozen orange juice, ice, milk and whatever other fruit you have on hand) I found a hummus recipe in it - and BOY is it good! AND easy!! We just devour it with crackers or pita or flat bread.

The only unfamiliar ingredient might be tahini - it's sesame seed paste, and you can get it in a store with a decent international food section, then it just stays in the fridge.

Hummus
=======

2 cups canned garbanzo beans, drained
1/2 cup fresh lemon juice
4 Tablespoons tahini
4 garlic cloves, peeled and crushed
1 and 1/2 Tablespoons olive oil
1 teaspoon salt

Place all ingredients in the food processor bowl and blend until smooth!

Rian, I add a little bit of cumin to mine - gives it a nice tang, that's not hot (so it's okay for the kids). Just rounds it off nicely. Also put lotsa garlic in there as well.

'Course ya gotta use the biggest cloves. How else ya gonna stave off the vampires?

Natural yoghurt's a good addition as well, if you want a creamier hummus.

Btw, are gar-wotsisthingies the same as chickpeas?

Yes, they're also called chickpeas (funny name, innit?!)

IMO, one adds garlic to a recipe the same way one adds vanilla - "Whoops, I just added an extra clove or two - sillly me! Whoops, I accidentally overflowed the teaspoon measure with vanilla - silly me!"

Yep yep garbanzo beans = chickpeas. It's not a funny name... they're pea-looking...

I love humus. My dad makes the best ever. His recepie is a lot like yours Ri.

My cafeteria used to make the WORST humus ever. The reason it was so obnoxiously disgusting... is get this... they skimped on the tahini!!

They were too cheap to buy tahini, so their humus was pureed chickpeas with a dash of lemon juice and a weak amount of garlic. It's a bland and gross as it sounds. Bleecchhhh...

Fortunately I live in a place where we cook for ourselves. Now I just need to borrow my corridor-mate's food processor. I wonder how people made humus before blenders and food-processers were invented...

Hey EarthBound, I googled peanut soup for you and got a lot of hits!

Check out this recepie from Epicurious Food:

African Peanut Soup Recipe

Here's a great version of this recipe which is pureed to be creamy rather than leaving the vegetables in chunks as a stew.

WEST AFRICAN PEANUT SOUP
(from "Sundays at the Moosewood Restaurant")

2 cups chopped onion
1 Tblsp vegetable oil
1/2 tsp cayenne or other ground chiles
1 tsp grated peeled fresh ginger
1 cup chopped carrots
2 cups chopped sweet potatoes
4 cups vegetable stock or water
2 cups tomato juice
1 cup smooth peanut butter
1 Tblsp sugar
chopped scallions
chopped roasted peanuts

Sauté onion in oil until it is transluscent. Stir in cayenne and ginger. Add carrots and sauté a couple minutes more. Mix in potatoes and stock, bring to a boil, simmer 15 minutes (until the vegetables are tender). Puree the vegetables with tomato juice (and some of the cooking liquid if necessary) in a blender or food processor. Return the puree to the pot. Stir in the peanut butter until smooth. Check sweetness and add sugar if necessary. Reheat
gently, using a heat difuser if necessary to prevent scorching. Add more water, stock, or tomato juice to make a thinner soup if desired. Serve topped with plenty of chopped scallions and chopped roasted peanuts.

Serves 6-8
