Favourite scene in the books? :D

I think my favourite is the scene where Gollum finds Frodo and Sam asleep in Cirith Ungol and almost regretts sending them to Shelob. That little instinct towards humanity (or hobbit-ty) made me want to whack Sam (for the first and only time) for shouting at Gollum the next moment and wrecking it.

Second favourite: Merry and Pippin feasting beside a drowned Orthanc

I have a lot of different favorite scenes, probably at least one for each of the many great characters, but my favorite "extended scene" is the majority of the chapter "The Scouring of the Shire." I just love how it is presented that all the amazing adventures the four Hobbits had been on, including killing some of the most evil beings in the entire world and saving all of Middle-earth, was simply "training" for them to be able to handle the defense of their own beloved home by themselves, having become very capable leaders and warriors. It also is interesting to see the Hobbits finally roused from their complacency and revolt against their oppressors, who have such a low opinion of the Shire-folk that they are completely taken by surprise when the "little guys" successfully stand up to the "big guys." If I had to pick a favorite piece of that chapter though, I've always loved when Lobelia Sackville-Baggins, who throughout "The Hobbit" and the early parts of "The Lord of the Rings" was an envious, cantankerous, snooty thing, stands up to several brigands with just her umbrella when threatened, and then later receives much accolades after being released from the Lockholes.
