That's the answer I was looking for. I looked up ostler, and it's short for "hostler" or "hosteler" meaning one who runs an inn.

Sorry, but "the guy in Frodo's song" was a bit too general of an answer. This is a trivia thread afterall

Though Bilbo did give wonderful gifts, This person I'm thinking of is specifically called "a giver of gifts beyond the power of kings" in FoTR.
